Bhendi chi bhaji,Maharastrian special

This is a Maharastrian bhaji (vegetable) prepared with Bhendi.Bhendi means ladys finger or Okra . Maharastrian dishes are a favourite at our place since my husbands root is from Mumbai.I found this recipe in a you tube video of Archanas Kitchen.It was a Marathi video but I could follow it and noted the recipe . We loved the bhaji very much.Goes well with the roti or with the main course.




Ingredients:
Bhendi/ladys finger -1/4 kg
Onion-2,chopped
Garlic -2-3,chopped
Curry leaves -2 sprigs
Mustard seeds -1/4 tsp
Cumin seeds - few
Hing - a generous pinch
Groundnut- 1/2 cup
Chilly powder -1 tsp or more
Coriander powder -2 tsp
Cumin powder -1/4 tsp
Amchur powder - a pinch
Goda Masala powder - 1/2 tsp (optional)
Raw groundnut -1/4 cup
Oil - 2 tbsp
Salt - to taste
Coriander leaves - 2 sprigs ,chopped


Method:

  1. Wash bhendi well,wipe it with a kitchen napkin until there is no signs of water and moisture.
  2. Chop it into round pieces discarding the top and the tail.
  3. Dry roast raw groundnut,peel it and coarsely powder it.
  4. Heat oil,splutter mustard seeds,cumin seeds and curry leaves.
  5. Lower the flame and add hing.
  6. Add garlic and onion,saute until translucent.
  7. Add all the powder one by one.
  8. Add sauteed bhendi,salt to taste.
  9. Lastly add groundnut and mix it well.
  10. Garnish with chopped coriander leaves.
