Whenever there is leftover boiled groundnuts I prepare this salad.You may prepare this salad with raw,roasted or boiled groundnuts.This salad is a favourite salad of every member in our house.I prepare different salads almost every day.Salads are the important part of the diet.You may prepare this salad with combination of your choice.
Boiled groundnut - 2 cups approx
Green chilly -2 chopped
Onion -1 chopped finely
Lime juice -2 tbsp
Salt - to taste
Carrot - 1/4 cup,grated
Coriander leaves - 2 tbsp,chopped
Grated coconut -2 tbsp (optional).
Curry leaves -3 -4,roughly torn
- Mix all the ingredients together in a bowl.
- You may also temper it with mustard seeds and curry leaves.
- You may also add grated beetroot and chopped tomatoes.
- Serve it with the main course.
