Vegetable rulam or rulav is vegetable upma with loads of vegetables for a healthy breakfast.This rulam is very colorful and eye pleasing.Even kids will relish this without any complaints. Khandwa suji is the main ingredient in this dish which is nothing but coarse semolina.You may eat it with any savories like mixture,sev or even with the curds.I learn't this rulam preparation from my mother in law (mayi).So thank you mayi for this wonderful and healthy recipe.
Ingredients:
Khandwa
suji-1 cup
Carrot-1
medium sized
Capsicum-1
medium sized
Onion-1
medium sized
Green
peas-1/4 cup
Cabbage-1/4
cup
Green
chillies-3
Mustard
seeds-1/4 tsp
Ghee 3
tbsp
Curry
leaves-10 -12
Turmeric
powder- a pinch
Sugar- a
pinch
Cashewnuts-10-12
pieces
Water -2
½ cups(hot water)
Coriander
leaves-to garnish
Salt –to
taste
Method:
- Heat 1
tbsp ghee in a kadai, splutter mustard
seeds, add curry leaves,green chillies,turmeric powder,cashewnuts ,fry for a
second and add suji and roast until you get nice aroma.
- Transfer
it to a plate.
- In
the same kadai add 2 tbsp ghee,add onion,cabbage,capsicum,green peas,carrot and
saute it for few minutes.
- Close
the lid, simmer and cook for sometime.
- Add
suji,salt,sugar and water and take a boil and continuously stir it to prevent
lumps.
- Cook
for 3-4 minutes on medium heat,stirring continuously till it turns dry.
- Garnish
with coriander leaves.
Tips:
You
may dry roast the suji separately.
You may also use fine semolina.
