I rather name this as Amma's super hit pulav instead of just "vegetable pulav". This pulav takes me back to my childhood days where Amma used to prepare this for us on every Saturday.Dad used to get green peas masala from the restaurant as an accompaniment.That was the routine then.
She always uses home made clarified butter(ghee) for the preparation and that is one of the secret ingredient.Until recently she used to follow the Saturday tradition of making pulav,but now it is prepared only on popular demand since all, we siblings are settled in different locations except lucky me stay just opposite her place.....So I can request her anytime whenever I urge.When Amma prepares pulav I bet our neighbour 's olfactory receptors will be activated.The house and the entire surrounding is filled with the aroma of pulao. Onions-2 (slit lengthwise)
Beetroot-diced 2 tsp
Tomatoes-2 (chopped into medium pieces)
Green chillies-4 (slit into 2)
leaves-few (chopped to garnish)

- Grind the
ingredients mentioned under it.
- Wash the basmathi rice,drain water completely,mix the ground masala to it and keep it aside.
- Add whole
spices ,cashews ,raisins to the rice mixture.
- Take a
pressure cooker,add ghee and heat it.
- Add onions
and fry it till translucent.
- Add the
rice mixture and fry for few minutes in simmer.
- Add vegetables,salt
to taste and water.
- Close the
lid and take exactly one whistle and off the flame.
