Minestrone
is a thick soup of Italian origin made with vegetables,often with the
addition of pasta or rice.It is one of the cornerstones of Italian cuisine,and
is almost as common as pasta on Italian tables.
Recipe
adapted from Nita Mehta
Ingredients:
Olive oil or any oil for cooking- 2tbsp
Onion- 1
chopped finely (1/2 cup)
Garlic- 2
flakes crushed
Potato- 1
small (diced into very small pieces) (1/2 cup)
Carrot-
1 (diced into very small pieces) (1/2 cup)
Celery or
green french beans-3-4 tbsp finely chopped
Tomatoes-
3 medium sized( blanched,peeled and chopped finely)
Baked beans or rajma (boiled)- 2-3
tbsp
Macaroni
or any other pasta -ΒΌ cup
Seasoning
cubes-5 cups stock or 5 cups water mixed with 25 cups stock or 5 cups water
mixed with 2 seasoning cubes.
Salt and
pepper to taste
Method:
1)To blanch the tomatoes,put them in boiling water for 3-4 mts,remove from
water and peel them to remove skin.chop them finely,keep aside.
2)Heat oil,add onion and garlic,stir fry till light brown.
3)Add carrots and potatoes and stir fry for a mt.
4)Add
macaroni,stir fry for for 1-2 mts.
5)Add celery and tomatoes,cook for 2-3 minutes.
6)Add stock and baked beans.
7)Give one boil.lower heat,cover and cook for 15 minutes,add salt and pepper to
taste and mix well.
8)Serve hot garnished with some grated cheese (optional)
