Mussels ,most commonly known as Neeli in konkani ,found abundant in Kerala.Mussel farming is most common in North Kerala.Studies say that people who consume Mussels have lower risk s of suffering from arthritis.It is also an excellent source of omega3 fatty acids,iodine etc
Ingredients:
Mussels-15
Chilly powder-2tsp
Turmeric
powder-1/4 tsp
Vinegar-1
tsp
Pearl onons-12
Garlic-6
Curry leaves-10
-12 leaves
Coriander
powder-2 tsp
Garam masala
powder-1/2 tsp
Tomato sauce-2
tsp
Pepper powder-1/4
tsp (optional)
Green chillies-2
(optional)
Salt-to taste
Method:
1)Marinade
the mussels with salt,turmeric powder,chilly powder and vinegar for 1 hour.
2)In a
pan shallow fry this in oil.
3)Keep
it aside.
4)I n
the same pan fry the pearl onions for 4 minutes.
5)Then
add Garlic,curry leaves and fry for half a minute.
6)Next
add coriander powder,garam masala powder,tomato sauce and fry for few seconds.
7)Then
add pepper powder and green chillies and
saute it for a minute.
8)Lastly
add Sauteed Mussels and cook for few minutes.
Tips:Remember to simmer the flame when you fry
the powders.
And the most important part:
How to
clean the mussels:
Method:
1)Wash the
Mussels thoroughly under running water.
2)Then
take it in a big vessel and keep it on high flame without adding water.
3)Close
the lid and keep for sometime.
4)Sometimes
water will ooze out.
5)Dont
panic ,open the lid little bit and simmer it.
6)If you
feel it is too dry add little water.
7)The
shells will open after sometime.
8)This
is the indication that it is cooked.
9)Then separate the flesh from the shell.
10)Then
clean the flesh by removing the
black dirt and hairy substance.
